The Beringer Knights Cabernet Sauvignon was vinified in the classic tradition of producing Bordeaux blends. Its bouquet offers wonderful fragrances of cassis, bilberries and Black Forest cherry cake. On the palate, the wine shows soft and silky tannins. Aromas of dark red fruit, bilberries, raspberries, dark cherries and vanilla unite with notes of black and blue fruit. The elegant structure of the Beringer Knights Cabernet Sauvignon is emphasised by a fine acidity. The wine is full-bodied with a fine, grainy texture. The prolonged, pleasant finish is accented by dense and vivid fruit aromas and rounded off by subtle hints of liquorice and mocha.The Beringer Cabernet Sauvignon from the Knights Valley matured for 16 months in French oak casks, of which 30% were new barrels and underwent malolactic fermentation for further development of texture and mouthfeel.
