Barramundi Shiraz

Production area: San Marzano, Salento, Puglia. At almost 100 meters above the sea level, with a high average temperature and very few rainfall during the year. Of all the plantet grapes in South Africa, the shiraz, or syrah, as the French call him, is without a doubt one of the most successful. It has everything to do with the ideal climate of the Cape for this grape. Warm but not too hot, with a good cooling in the afternoon, which seems a bit like the Rhone region, where this wonderful grape originated. By a short fermentation process at low temperature it gets a strong character, with delicious fruit. Two thirds of the wine then matures about six to eight months in a mix of French and American oak, which makes it well rounded and gets it some extra complexity. That is why wood and fruit remain so perfectly balanced.
