Der Camivini Tank Nº 26 Nero d'Avola Appassimento IGT aus Sizilien wird aus der für Sizilien typischen Rebsorte Nero d'Avola hergestellt. Von den Einheimischen wird diese Rebsorte „Principe Siciliano“ (sizilianischer Prinz) genannt. Der Ausbau erfolgt im hölzernem Gärtank. In der Nase Aromen von Frucht und Mandeln. Am Gaumen ist der italienische Rotwein leicht und trocken mit Aromen von Rosinen, Backpflaumen und mediterranen Gewürzen. Der lange Abgang hat eine dezente Schokoladennote.

Das besondere an diesem Appassimento ist, dass die Trauben direkt am Rebstock trocknen. Sie werden erst geerntet, wenn sie den Großteil des Wassers verloren haben. So entsteht eine dichte und intensive Aromatik mit einer leichten Rosinennote und harmonischer Restsüße. Diese Methode wird TANK-Verfahren genannt - eine neue Auslegung des Appassimento-Verfahrens. Beim klassischen Appassimento-Verfahren trocknen die reifen und gesunden Trauben auf luftigen Gestellen oder in gut belüfteten Kisten.

Der kraftvolle Nero d'Avola passt gut zu kräftigen Wildgerichten, Braten und gut gereiftem Käse.
