Collefrisio Appassimento Rosso

Der Collefrisio Appassimento Rosso stammt aus den Abruzzen in Mittelitalien und wird aus einer Mischung von autochthonen Trauben wie Montepulciano d'Abruzzo, Sangiovese sowie der internationalen Sorte Merlot vergoren. Der Wein wird durch die Appassimento-Methode hergestellt, bei der die Trauben vor der Vinifikation teilweise getrocknet werden, um eine höhere Konzentration von Aromen und Zucker zu erreichen.

Im Glas präsentiert sich der Collefrisio Appassimento Rosso mit einer tiefen, rubinroten Farbe und einer klaren, undurchsichtigen Textur. Beim Schwenken zeigt er eine hohe Viskosität und bildet am Rand des Glases einen leichten Purpurschimmer.

In der Nase entfaltet der Wein ein komplexes und intensives Bouquet, das von reifen dunklen Beeren wie Schwarzen Johannisbeeren, Brombeeren und Kirschen dominiert wird. Diese werden begleitet von würzigen Noten wie Vanille, Schokolade, Tabak und Zedernholz sowie einem Hauch von Lakritz.

Am Gaumen ist der Collefrisio Appassimento Rosso vollmundig und ausgewogen, mit gut integrierten Tanninen und einer feinen Säurestruktur. Die fruchtigen Aromen kommen hier ebenfalls zum Ausdruck und werden von Noten von Pfeffer, Zimt und Nelken begleitet. Im Abgang zeigt sich der Wein lang und anhaltend, mit einem angenehmen Nachgeschmack von dunklen Früchten und Gewürzen.

An seinem auffallenden Etikett ist der Mabis Biscardo Enigma Appassimento Sangiovese Rubicone IGT erkennbar. Enigma (dt. rätselhaft) hat das italienische Weingut Mabis seinen Appassimento benannt. Unter Leitung der Familie Biscardo und einigen Landwirtschaftsbetrieben der Emilia-Romagna wurde der Rotwein mit dem Hinweis an alle Weingenießer und Appassimento Liebhaber erschaffen, diesen mystischen Wein mit geweckter Neugier zu entdecken.Die Sangiovese Trauben, aus denen der Rotwein gekeltert wird, werden im Spätherbst von Hand geerntet. Die Beeren sind zu diesem Zeitpunkt teilweise getrocknet. Um den Früchten weiterhin Wasser zu entziehen, sodass Zucker und Extrakt konzentrierter werden, wird das Trocknungsverfahren fortgefahren.
