Auch heute hält sich hartnäckig die Meinung, Lambrusco sei ein eher minderwertiger, viel zu süßer, Massenwein. Das lässt sich allerdings überhaupt nicht auf die Lambrusco des alteingesessenen Familienbetriebs Medici Ermete anwenden, welcher in Gaida im nördlichen Teil der Emilia-Romagna liegt. Hier wird ein überaus schmackhafter und hochwertiger Lambrusco kreiert. Die besten Produkte von Medici Ermete stehen in zahlreichen Spitzenrestaurants auf der Weinkarte.

Ende des 19. Jahrhunderts wurde der Betrieb von Remigio Medici gegründet und noch heute ist das Unternehmen im Besitz der Familie Medici, mittlerweile in der vierten Generation. Geleitet wird der Betrieb heute von Alberto Medici.

Auf 75 Hektar werden die Rebsorten Lambrusco Salamino, Lambrusco Marani, Lambrusco Grasparossa und Lambrusco Ancelotta angebaut. Ungefähr 800.000 Flaschen hochkarätigen Lambrusco produziert das Weingut. Die Weinhänge der Emilia-Gegend sind dank ihres Mikroklimas und der lehmigen Bodeneigenschaften hervorragend für den Anbau dieser Rebsorten geeignet. Die geernteten Trauben werden genauso wie bei den führenden Weingütern der Welt mit größtmöglicher Aufmerksamkeit behandelt und der Betrieb arbeitet nach umweltfreundlichen Kriterien. Die für die Produktion verwendeten Trauben werden streng selektiert, um eine bestmögliche Qualität zu erreichen. Hier werden die DOC-Vorschriften bezüglich des erlaubten Hektarhöchstertrags vielfach deutlich unterschritten.
