Corvina Veronese, Corvinone und Rondinella Trauben werden nach der handverlesenen Ernte 3 - 4 Monate eingetrocknet, bevor die Vinifizierung stattfindet. Durch die Trocknung der Trauben werden der Zuckergehalt und der Extrakt des Weines und somit der Alkoholgehalt erhöht. Diese Methode nennt man Appassimento. Das Resultat ist ein kräftiger trockener Rotwein mit leichter Restsüße.

The Zenato Valpolicella is somewhat similar to the Bardolino; however, the Valpolicella is a little more powerful and shows a fuller body – it is simply of better quality. The wine consists of Corvina Veronese (responsible for the bouquet and the acidity), Rondinella (lots of sugar) and Sangiovese (gives the wine its elegance).This is a wine that can be enjoyed young, but another few years of ageing in the wine cellar will further enhance its qualities. For years, Valpolicella has been one of Italy’s most famous wines. The Zenato Amarone della Valpolicella Classico is a sensational masterpiece of taste and fragrance. The Amarone has an impressive elegance, ripe fruit and an inviting bouquet. It is ruby-red in colour and shows fine hints of aromatic herbs. On the palate, the wine is impressively powerful, with warm, rich nuances of wild cherry and chocolate. The Amarone is a little jewel in the range of Zenato wines. It is made of the excellent Corvina, Rondinella, Oseleta and Croatina grapes, which come from the Valpolicella Classico region from the municipalities of Sant'Ambrogio, Negrar, Pedemonte, Fumane, San Pietro in Cariano and Marano. The grapes are harvested and picked by hand and subsequently dried for a period of three months. As a consequence, much of the liquid evaporates, resulting in berries that are extremely rich in sugar. After fermentation, the wine matured for 30 months in oak casks and for a further 12 months in the bottle.

Château Malescasse Haut-Médoc Cru Bourgeois AOP 2016
Dieser 2016er Cru bourgeois aus der renommierten Appellation Haut-Médoc ist der beste Beweis dafür. Die klassische Assemblage aus 53% Merlot, 38% Cabernet-Sauvignon und 9% Petit Verdot bringt einen verführerischen, vollmundigen und hervorragend ausbalancierten Wein hervor. Dieser Jahrgang profitiert insbesondere davon, dass der Cabernet-Sauvignon in Ruhe ausreifen konnte und mit seiner Eleganz ein schönes Gegenstück zur üppigen Frucht des Merlots darstellt. Der Wein begrüßt den Kenner mit einem tiefen Rubingranat. In der Nase dann viele dunkle Beeren, rote Kirschen und Grenadine. Am Gaumen komplex, mit süßer Frucht und Aromen von Pflaumen und gut integriertem Holz. Viel Würze, schöne, präsente Tanninstruktur und ein langer Abgang.Der Decanter beschreibt ihn als einen der besten Malescasse überhaupt und vergibt 91 Punkte. Bewertung Falstaff: 91-93 Punkte. Der Malescasse 2016 wird mindestens für 20 Jahre lagerfähig sein; die Trinkreife wird in 2-3 Jahren einsetzen. Wer ihn heute schon probieren möchte, sollte ihn mindestens zwei Stunden vorher dekantieren.Dieser klassische Haut-Médoc Wein, ist ein Genuss zu allem Gegrilltem, aber auch zu Hartkäse, Wild oder Pasta-Gerichten.
