We all know the famous Valpolicella wines?
The "Ripensato" is a specialty of this region: it consists of 100% for the typical Valpolicella region grape Corvina. The wine is a kind of link between the normal red wine from the Valpolicella area and the Amarone.
The Amarone is a Valpolicella vine from partially dried grapes. This means that the grapes stay on the vine until they are fully ripe, then they are read and a few weeks to air dry before being fermented.
They lose aqueous constituents. This increases the concentration of the extract substances and sugar. The Amarone is therefore a full-bodied, soft rich, powerful wine.
In our "Ripensato" however, the grapes are fermented and then for a few weeks layed on the skins of the Amarone after the Amarone was removed. The wine takes from the Amaronetrester extract and those ripe, jammy notes, which are typical of Amarone. The "Ripensato" is denser and richer than a normal red wine, has sweet tannins and more ripe fruit.
Colour: intense cherry red
Spicy aromas of dried fruit, fine tannins, rich, velvety.
To substantial dishes of pork and beef, fried in dark sauce, grilled meat, lamb and venison, blue cheese, Muenster.

Das Weingut Palazzo Pisano liegt in Venetien im Valpolicella-Gebiet und umfasst ein wunderschönes Landgut. Es ist im Besitz der Familie Vanucci und ist im altrömischen Stil erbaut. So findet man in der Eingangshalle eine lebensgroße Marmorstatue Senecas, der im römischen Reich Philosoph, Dramatiker, Naturforscher und Politiker war.
Das Weingut ist nicht zu verwechseln mit dem Palazzo Pisani Moretta, welches ein Palast im venezianischen Sestiere San Polo im Herzen Venedigs am Canale Grande ist.
Erfolgreich ist das Weingut Palazzo Pisano mit den Rebsorten Corvina, der typischen Rebsorte für Valpolicella, aber auch Merlot, Sangiovese sowie Montepulciano.
