The Pongracz Méthode Cap Classique Brut is made from the traditional Pinot Noir and Chardonnay grape varieties. After the first fermentation and the subsequent malolactic fermentation, the wine remains in contact with the yeast for another two years in order to carry out the secondary fermentation in the bottle. After the sediment is removed, the bottles are corked up and kept in a cool place for 2 to 4 months before the sparkling wine is launched on the market. The Pongracz Pongracz Méthode Cap Classique Brut is impressive in its enormous complexity and wonderful elegance. The bouquet offers intense fragrances of green apples and fresh bread. On the palate, it offers fine notes of yeast that are softly overlaid with roast aromas and nuances of red fruit. The persistent perlage gives the sparkling wine its stimulating freshness. An all round crowd pleaser and extremely versatile bubbly crafted from a selection of the classic MCC varieties, Pinot Noir and Chardonnay.Both varietals were hand-picked: Chardonnay at 18-19.5°B for fruit and elegance and Pinot Noir at 18.5-20°B for complexity and length of flavour. In the cellar whole bunch pressing ensures fractional recovery. After settling of the juice the two varieties are fermented separately. They are then cross-blended along with reserve wine if necessary, bottled and left for 15 to 18 months yeast contact time before disgorgement. Light yeasty aromas and secondary tones of limey fresh fruit on the nose with rich creamy complexity on the palate. The exceptionally fine mousse contributes freshness and finesse.

The Pongracz Méthode Cap Classique (MCC) Rosé consists of 60% Pinot Noir and 40% Chardonnay. The Pinot Noir grapes give this sparkling wine its soft salmon-pink colour. The term used for South African sparkling wines made with the traditional French method is Méthode Cap Classique or MCC, and corresponds to the production method used in the Champagne region. This sparkling wine is certainly a match for many champagnes. Pongracz Méthode Cap Classique Rosé is not only enchanting to look at - its bouquet pampers your senses with a variety of aromas such as notes of ripe fruit and light toasted notes, along with fine, subtle nuances of yeast. The Simonsig Kaapse Vonkel Brut Rosé offers notes of fresh red berries, rose petals, crunchy green apples and nuances of candyfloss in its bouquet. On the palate, the stimulating sparkling wine is dry, creamy and sophisticated, with a crisp acidity. Its finish is refined with nuances of quince, creating a pleasant taste experience.
