Delheim Chenin Blanc Wild Fermented
Delheim Chenin Blanc has a fresh colour with a green tint. The wine shows complexity from the natural fermentation with an array of flavours. Grapefruit, orange and white peaches on the nose with subtle savoury and oak flavours. The refined and elegant palate shows restraint, with lengthy tannins and sweet fruit that will complement a variety of dishes. The grapes were handpicked, followed by crushing, de-stemming and gentle pressing. Only two thirds of the juice was settled with enzymes; the balance was taken directly to barrel for fermentation. One third of the blend was fermented cold in concrete tanks, the other two thirds in barrel. Only natural fermentation took place. The wine in the concrete tanks spent 7 months on the lees with the balance aging in French oak barrels for 7 months. A combination of 225 and 500L barrels were used of which 20% were new.Suitable for vegans.
