The Warwick Professor Black Sauvignon Blanc is a white wine aged in stainless steel tanks. The grapes come from two different plots located on the heights of the Simonsberg in Stellenbosch. One was planted in 1985, the other in 2003. The diverse harvest adds complexity, different flavors and structure to the wine. The grapes are harvested by hand in the early morning and immediately transported to the cellar. Before pressing, the mash remains on the skins for 6-12 hours. Then the aromatic Sauvignon Blanc is fermented cold in stainless steel tanks. The 100 days of aging on the fine lees gives the Sauvignon melt.
Produced in limited quantities, the Warwick Professor Black Sauvignon Blanc displays typical aromas of elderflower, nettle, passion fruit and lime. Lively and zesty on the palate with an abundance of passion fruit and lemon with a fresh lingering acidity.
The name is a tribute to "Professor Black", a researcher who grew South Africa's first peaches on Simonsberg.
