Das Weingut Zevenwacht liegt an der Stellenbosch Wine Route, in der südafrikanischen Weinregion Stellenbosch. Die Ursprünge des Weingutes reichen weit in die Geschichte Südafrikas zurück:

Im 17. Jahrhundert gründete der Weinfarmer Jean Le Roux das Weingut ?Langverwacht?. Im Jahre 1798 übernahm Pieter de Waal das Weingut. Später ging auch das Nachbarweingut ?Zevenfotein? in seinen Besitz über und beide Weingüter wurden verschmolzen zu ?Zevenwacht?.

Heute werden auf ca. 200 Hektar des insgesamt 450 Hektar umfassenden Besitzes Trauben angebaut. Neben dem Weinbau betreibt Zevenwacht eine eigene Käserei und engagiert sich touristisch.

Kleine Zalze Vineyard Selection Cabernet Sauvignon
The Kleine Zalze Vineyard Cabernet Sauvignon is a red wine that ranks among the most exquisite creations of South African viticulture. In John Platter’s Wine Guide, former vintages of this wine were awarded 4.5 or 5 out of 5 possible stars.This pure varietal Cabernet unites notes of black cherries, dark plums and black currants in its multi-layered bouquet, which harmonise wonderfully with nuances of cedar, oak and cigar box. On the palate, the wine shows great density, fine tannins and great elegance, complemented by impressively well-integrated wood aromas and a fascinating balance. The finish is long-lasting, showing a lovely, sustained spice.The wine matured for 20 months in casks, of which 40% were first-fill and 30% each were second- and third-fill barrels. Delheim Shiraz Cabernet Sauvignon
Blackberry and plum aromas, backed by undertones of dark chocolate and vanilla. The wine is elegant and lingers on the palate.Fermentation with selected yeast strains. Temperature was maintained at 25-28°C. Pump-overs were conducted 4 times a day until fermented dry. The wine was matured for 13 months in French oak, and then bottled with a screw cap.
