How do you make an excellent wine even better? For Mariano García Fernández, the founder of the Bodega Aalto estate, this can be achieved only by selecting the best grapes. The selection of the grapes was carried out parcel by parcel. This explains the wine’s ‘PS’ designation, which stands for ‘parcel’ and ‘selection’. Only the grapes from the best parcels with the oldest vines are selected to produce the Aalto PS. The grapes for this pure varietal Tempranillo come partly from vines that are more than 60 years old. The vines grow on soils with lime and slate subsoils, giving the wine a lovely mineral freshness. The wine is aged in steel tanks before it matures for 21 months in new French barriques. Subsequently, the wine is aged for another 6 months in used casks.
The Aalto PS Magnum is a dark, dense purple in colour. Its bouquet is characterised by strong notes of wood and flavours of plums and black cherries. On the palate, the wine is extremely complex, concentrated and powerful. The body continues unabated in a never-ending finish. Although the wine is already quite balanced, further ageing in the bottle will certainly enhance its quality.
Serve the Aalto PS Magnum with lamb, game or tangy cheeses. This wine is a genuine delight!
