Die Hacienda Monasterio hat von Anfang an mit Peter Sissek zusammengearbeitet und so Pflanzung und Weinbergsarbeit ökologisch gestaltet. Der Ertrag wird bewusst niedrig gehalten um die angestrebte hohe Qualität an Traubenmaterial zu erhalten. Die Cosecha von Hacienda Monasterio ist ein absolut konzentrierter und mächtiger Rotwein.

Der Wein verfügt über eine tiefviolette Farbe. Die Nase präsentiert sich mit einem dichten Duftbogen von Kaffee- und Toastnoten. Eingeschlossen von Fruchtnoten der Kirsche, Pflaume und Waldbeere. Nach einiger Zeit kommen Schokoladennoten und der Duft von Zigarre hinzu. Am Gaumen beginnt der Hacienda Monasterio Cosecha mit enorm viel Schmelz um dann zwischen reifen Fruchtnoten und ausgewogener Säure an der Zunge zu spielen. Feine Gewürznoten werden getragen vom stoffig, kraftvollen Körper. Im Finale zeigen sich Aromen von Lakritz und etwas Zimt.

Der Wein verbrachte über 18 Monate in französischen Barriques, wovon etwa ein Drittel Erstbelegung waren, was unter anderen zur langen Lagerfähigkeit beiträgt.

There are quite a few people who claim that Aalto wines represent the best of Spanish viticulture in the Ribera del Duero region. Every year, the Aalto wines are once again compared to those produced by the Vega Sicilia estate, and the Aalto wines often win by a nose. For more than 30 years, Mariano García Fernández, the founder of the Aalto winery, was responsible for the wines produced by the Vega Sicilia estate, of which he was the Technical Director. With his own Bodega Aalto, García Fernández wants to achieve the best result without losing respect for the grapes. In creating his wines, he strives for the maximum expression of the terroir, uniting structure and power with elegance and complexity. The Aalto was characterised by a warm winter’s end and an early spring with early flowering. Sufficient rain in summer and a dry autumn led to grapes of an optimal quality. The grapes come mainly from very old vines that are up to 80 years old.The pure varietal Tempranillo (in the Burgos and Valladolid region better known as Tinto Fino) is a cherry red in colour. The wine offers fine notes of spices on the nose, along with light flavours of well-integrated wood. On the palate, the Aalto is wonderfully fresh and dense. Notes of tobacco, coffee and subtle aromas of liquorice reveal the unique style so typical of this Aalto. Due to its soft and round character, the wine can already be enjoyed young. Owing to the soft, enclosing tannins and a good acidity, the Aalto will increase its complexity over the coming years. The ageing of the wine in half new and half used barrels ofAmerican and French oak ensures that it will store well in the bottle. Enjoy the Aalto with a lovely beef roast or simply on its own in front of the fireplace.

How do you make an excellent wine even better? For Mariano García Fernández, the founder of the Bodega Aalto estate, this can be achieved only by selecting the best grapes. The selection of the grapes was carried out parcel by parcel. This explains the wine’s ‘PS’ designation, which stands for ‘parcel’ and ‘selection’. Only the grapes from the best parcels with the oldest vines are selected to produce the Aalto PS. The grapes for this pure varietal Tempranillo come partly from vines that are more than 60 years old. The vines grow on soils with lime and slate subsoils, giving the wine a lovely mineral freshness. The wine is aged in steel tanks before it matures for 21 months in new French barriques. Subsequently, the wine is aged for another 6 months in used casks. The Aalto PS is a dark, dense purple in colour. Its bouquet is characterised by strong notes of wood and flavours of plums and black cherries. On the palate, the wine is extremely complex, concentrated and powerful. The body continues unabated in a never-ending finish. Although the wine is already quite balanced, further ageing in the bottle will certainly enhance its quality. Serve the Aalto PS with lamb, game or tangy cheeses. This wine is a genuine delight! It is also available in a magnum bottle.
